The Pasilla chile or chile negro is a dried chilaca chile pepper. It is a long and narrow member of species Capsicum annuum. Pasilla literally translates as “little raisin”, named for the pepper’s wrinkled dark skin. The flavor profile is similar to ancho chile, and you get hints of smoky cocoa and raisins, underneath the earthy sweetness. In addition, this richly flavored chile is pretty mild, and ranges from 1,000 to 2,500 Scoville heat units. We love using it in chili recipes, and it is a great addition to taco seasoning.
