Sumac is essential in Middle Eastern cooking, and is derived from a the dark red berries of a Mediterranean bush that has grown wild for many years. The berries are sun-dried and usually ground. Often used as a condiment, Sumac can be sprinkled on food just like salt and pepper, and can be used as a flavor enhancer. It is a necessary ingredient in the spice mix Zatar.
