We created this recipe with some of the same bold flavors that we love in Italian food. The bitter Radicchio lettuce nicely contrasts with the saltiness of green olives and parmesan cheese, and vinegar zing of the pepperoncini peppers. All of the salad ingredients work really well with the creamy balsamic dressing, using our Bellindora Fig Balsamic Vinegar. You can make the dressing as a vinaigrette, if you prefer, just omit mayonnaise from the recipe.
We regularly make this salad as a side with meals, but it can also be used as a main dish. It pairs well with beef, chicken and fish dishes. As a main meal, top with slices of grilled beef or grilled chicken, or chunks of canned tuna. The amount of greens and veggies used in this recipe are subject to what size salad you would like to prepare, so there are no specific measurements for the salad ingredients.
How to make Italian Inspired Salad
- Salad Ingredients
- Romaine Lettuce
- Radicchio Lettuce
- Celery, thinly sliced
- Red Onion, thinly sliced
- Tomato, chunked or use cherry tomatoes
- Green Olives
- Pepperoncini Peppers
- Radishes, sliced
- Parmesan Cheese
- Dressing Ingredients
- 1/4 tsp Roasted granulated Garlic
- 1/8 tsp Pure Ocean Sea Salt
- 1/8 tsp Tellicherry Peppercorns, ground
- 2 tbs Mayonnaise
- 2 tbs Bellindora Fig Balsamic Vinegar
- 1/2 tsp Mediterranean Oregano
- 1/4 cup + 2 tbs Seraphino Olive Oil
Prepare the dressing first to give the dry ingredients time to hydrate and allow the flavors to fully combine before using.
Simply add all ingredients in a bowl or small blender, and mix well until dressing is well mixed. We used a bullet blender to combine these dressing ingredients, but a whisk will do just as nicely. Set aside in the refrigerator until you are ready to dress the salad.
Rinse and dry the romaine and radicchio lettuce, and set aside while preparing the rest of the ingredients.
For extra crisp, let lettuce sit in cold ice water for a few minutes before rinsing.
Slice celery, radishes and red onion, and set aside.
You can add the olives whole, if you like, or slice them in rounds.
Add romaine and radicchio lettuce to a plate, top with prepared veggies.
Add Pepperoncini peppers, and sprinkle parmesan cheese on top.
Then add Creamy Italian Balsamic Dressing. Enjoy!
